We are nearing the end of the term. A two week break doesn't sound like a lot so make the most of it. Work when you need to, but don't forget to do the things that regenerate you. The shortest days of the year can feel dark, but when we come back in January the days will be getting longer and it won't be 2020 anymore. This has been an amazing year, full of strangeness and new things. Did you ever expect to know so much about Zoom?
When you are taking time for yourself in the next few weeks, how about making some cookies or other tasty treats? My staff and I put together a few of our favorite recipes.
No-Bake Saucepan Cookies
Ingredients:
- 1 stick of butter
- 0.5 cups milk (alternative milks wont work!)
- 1.5 cups sugar
- 1 tsp salt
- 2 oz. unsweetened chocolate
- 1 tsp vanilla
- 1 cup shredded coconut
- 1/2 cup chopped nuts (optional)
- 3 cups instant rolled oats
1. Combine butter, milk, sugar, salt, and chocolate in a saucepan over medium heat. Bring to a boil and boil 2-3 minutes.
2. Remove saucepan from heat. Add vanilla, coconut, nuts (if using), and oats. Stir to combine.
3. Drop by teaspoonful onto waxed paper. Let them cool 1-2 hours. Enjoy!
Sugar cookies:
1/2 cup butter
1 cup brown sugar
2 eggs
2 1/4 cup flour
2 tsps baking powder
1 tsp vanilla
Cream the butter and sugar. Beat in eggs. Mix in dry ingredients. Bake at 350 degrees for about 10 minutes.
Tart and Toasty Apple Crumble
Ingredients:
For the apple mixture:
- 2 1/2 lbs granny smith apples
- 2 tbsp lemon juice
- Lemon zest from 1 lemon
- 1/3 cup brown sugar
- 1 tbsp cornstarch
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Small pinch of ground cloves
- 1 tsp vanilla extract
- 1/4 cup unsalted butter
For the topping:
- 3/4 cup all purp. flour
- 1/2 cup brown sugar
- 1 1/4 cup oats
- 1/2 tsp salt
- 3/4 cup unsalted butter (cold and cut into small cubes)
- 1/2 tsp cinnamon
1. Preheat oven to 350F.
2. Begin mixing the apple crumble topping. Add all the ingredients except butter to a large bowl and mix together.
3. Add the cold cubed butter to the mixture and work together with your hands, (pressing the butter into little coins and then breaking apart) until you have a crumbly, not powdery mixture and place in the fridge.
4. Begin making the Apple filling. Add brown sugar and corn starch to a large bowl and mix.
5. Peel, core, and slice apples. The thinner you slice them the softer the baked mixture will become and the thicker you leave them the mor bite the mixture will have. I like to have a combination of different thicknesses!
6. Place the apples in the bowl of sugar and corn starch and drizzle the lemon juice and vanilla extract. Add the cinnamon, nutmeg, clove, and lemon zest. Toss to combine.
7. Add the apples to a deep baking dish (around 8x8 inches) 1-2 layers at a time. Drop a few small cubes of butter in between layers throughout the dish until the dish is full of all the apples and butter.
8. Add the chilled crumble topping onto the apples and bake for about 45 - 60 minutes (or until the top is golden brown and the juices are bubbling!)
9. Serve with vanilla ice cream or whipped cream!! YUM :P
Ginger cookies
3/4 cup butter
1 cup granulated sugar
1/2 cup dark molasses
1 large egg
1 tbsp ground ginger
2 tsps ground cinnamon
1 1/2 tsps baking soda
1/4 tsp each: allspice, nutmeg, cloves
2 1/2 cups flour
Cream the butter and sugar. Beat in the molasses and egg. Mix in the dry ingredients. Bake at 375 degrees for 10-12 minutes.
Meringue kisses
beat until stiff but not dry:
3 egg whites
1 tsp vinegar
1/8 tsp salt
Fold in 3 1/2 tbsp jello
3/4 cup sugar
1 cup mini chocolate chips
bake at 250 until dry.
